Your discussion of efficiency vs ethics of eating animals raises old philosophical debates between utilitarianism promoted by John Stuart Mill vs the Metaphysics of Morals elucidated (I use the term wryly) by Immanuel Kant. The Kant philosophy can be reduced to what is translated as the "Categorical Imperative", or what we would call the Golden Rule.
It is an interesting question whether Kant's philosophy can be applied to animals, or at least to higher animals.
It also raises the question of when in the course of human evolution our ancestors evolved from sentience to conscience.
You suggest that some living animals may already have achieved this transition.
More questions than answers, but perhaps it will stimulate some further discussion
