Reducing Your Risk 

When Charlie Bell died of colon cancer last month at age 44, it made news worldwide. Mr. Bell, you see, was the CEO of McDonald’s, and was a self-avowed consumer of the company’s products. Reports connecting meat-rich diets with serious health risks are becoming more frequent in the news media. And these studies are informing us that long-term consumption of red meat and processed meat increases the risk of colon cancer, while diets high in fruit, vegetables, whole grains and legumes lower the rates of cancer and heart disease.

  • Make the change gradually. Let your system become accustomed to its new diet.

  • Eat plenty of dietary fiber. Fiber is essential for healthy digestive-tract function, and is abundant in whole-grains, bran, psyllium husks, flax seeds, beans, fruits, and vegetables.
