Sweet Potato Biscuits

1 cup mashed sweet potatoes
3 Tbsp. safflower oil
2 Tbsp. maple syrup
1 tsp. apple cider vinegar
½ tsp. salt
1 cup whole-wheat pastry flour
2 tsp. baking powder
½ tsp. nutmeg

 

  1. Preheat oven to 400 degrees. Coat baking sheet with oil.
  2. Combine sweet potatoes, oil, syrup, vinegar and salt in large bowl.
  3. In a separate bowl sift flour, baking powder and nutmeg.
  4. Pour dry mixture into wet and cut with a fork until mixture comes together. Add water as necessary.
  5. Drop dough onto prepared baking sheet. Bake 15-17 minutes, or until tops are lightly browned and firm to the touch.
