Tomato and Basil Bruschetta

Ingredients

  • 6 Roma tomatoes
  • 2 cloves garlic, minced
  • 2 Tbsp. olive oil
  • 2 tsp. balsamic vinegar
  • ¼ cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • 1 baguette or Italian bread

Instructions

  1. Preheat oven on broiler setting.
  2. In a large bowl, combine the tomatoes, garlic, olive oil, vinegar, basil, salt and pepper. Let sit for 10 minutes.
  3. Slice your bread into ½’’ thick slices. Place on a cookie sheet and broil for 1-2 minutes, until lightly golden. Turn toast over and repeat.
  4. When cool enough to handle spoon mixture on top and serve.
