Vegan Banana Bread

Coconut oil makes this recipe so mouthwatering and moist no one will guess that it’s vegan!

Ingredients

  • ½ cup whole raw macadamia nuts
  • 1 cup organic whole wheat pastry flour
  • ¾ cup organic unbleached white flour
  • ½ tsp. baking soda
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. salt
  • ½ cup unrefined coconut oil
  • ½ cup dark brown sugar (unprocessed is best)
  • ½ cup organic granulated sugar
  • 1 cup very/over ripe bananas, mashed
  • 1/3 cup silken tofu, drained and mashed
  • ¼ cup soy milk
  • 1 tsp. apple cider vinegar
  • 1 tsp. vanilla extract

Instructions

  1. Preheat oven to 350°. Line a baking sheet with parchment paper.Layer macadamias on baking sheet and roast for 5-7 minutes. Remove from oven and let cool.
  2. Sift together flours, baking soda, cinnamon, nutmeg, and salt in a large bowl.
  3. Meanwhile, combine coconut oil and sugars into blender and blitz for 1 minute. Add banana, tofu, soy milk, vinegar and vanilla and process until smooth.
  4. Fold wet ingredients into bowl with flour mixture and stir until just incorporated.
  5. Chop roasted nuts coarsely. Fold nuts and chocolate chips into batter. Grease loaf pan with a little coconut oil and pour in batter. Sprinkle top of batter with sugar if desired (it will caramelize and create a delicate crust).
  6. Bake for 1-1 ½ hour or until a toothpick inserted into the center of the loaf comes out clean. Remove from oven and let cool. Serve as breakfast, desert or as a snack. Enjoy!
