Apple Spice Cake

2 tsp. egg replacer powder (follow directions on box)
½ cup maple syrup
¾ cup oil
¼ cup buttermilk
2 tsp. vanilla
1½ cups grated apples
½ cup chopped pecans
2 cups whole wheat pastry flour
½ tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
½ tsp. ground cloves
¼ tsp. ginger
¼ tsp. nutmeg
1/8 tsp. allspice

  1. Preheat oven to 300 degrees. Grease an 8x8 inch pan.
  2. Mix egg replacer, maple syrup, oil, buttermilk and vanilla. Stir in apples and nuts.
  3. In a separate bowl sift together the flour, salt, baking soda, and spices.
  4. Fold into apple mixture and mix well, but do not over mix.
  5. Pour batter into prepared pan and bake in preheated oven for 1 hour or until a toothpick inserted in the center comes out clean.
  6. Serve with your favorite soy or dairy ice cream.
