Date Nut Party Treats

Ingredients

  • 1-12oz. pkg. Sunridge Farms Organic Medjool Dates (about 20 dates)
  • ½ C. Tofutti "Better Than Cream Cheese"
  • 1 ½ C. unsweetened, shredded coconut
  • 40 almonds

Instructions

  1. If you like, soak the almonds in water for an hour or longer before using this recipe. It makes for greater digestibility and a nice texture, reminiscent of water chestnuts, but you may use them as is or you may want to blanch them.
  2. Carefully cut dates in half, take out pits and line up on cookie sheet or platter.
  3. Place "Better Than Cream Cheese" in a bowl and blend together well with half the coconut. If you use regular cream cheese, smooth until creamy, then add the coconut and mix well.
  4. Using a small spoon, fill each date with enough "cream cheese" mixture to cover date.
  5. Press one almond into the center of each one. Sprinkle a little shredded coconut on top. Serve at room temperature or chilled.
