Luscious Lemon Cupcakes

Ingredients

  • 1¼ cups unbleached flour
  • 1½ cups whole wheat pastry flour
  • ¼ tsp. salt
  • ½ tsp. baking powder
  • 1 tsp. baking soda
  • ¼ cup butter, softened
  • ¼ cup oil
  • 1½ cups sugar
  • 1 cup milk
  • ½ cup yogurt
  • 1 Tbsp. lemon zest
  • 2 tsp. lemon extract

Instructions

  1. Preheat oven to 350F. Line a muffin tin with cupcake sleeves and set aside.
  2. In a medium bowl, sift together flours, salt, baking powder and soda. Set aside.
  3. In a large bowl beat butter and oil together. Add fructose and mix. Add milk, yogurt, lemon zest and lemon extract. Mix until combined.
  4. Slowly add flour mixture to wet mixture and mix until just combined.
  5. Fill prepared cupcake sleeves until full.
  6. Place in the middle of the rack and bake for 18–22 minutes.
  7. Cool completely and add your favorite frosting.
