Mexican Wedding Cookies

Ingredients

  • 1 cup salted butter, softened
  • 1½ tsp. vanilla extract
  • ½ cup sifted powdered sugar
  • 2¼ cups all-purpose flour, sifted
  • 1 cup chopped macadamia nuts
  • 1½ cups powdered sugar

Instructions

  1. Preheat oven to 350F.
  2. Using an electric mixer beat together butter, vanilla, and ½ cup powdered sugar.
  3. Mix in flour and macadamia nuts.
  4. Scoop dough and form into 1 ½ ’’ balls.
  5. Place on an ungreased cookie sheet.
  6. Bake for 15-17 minutes, or until bottom of cookie is lightly golden.
  7. Remove from heat and immediately roll in additional powdered sugar.
  8. Once cookies have completely cooled, roll in powder sugar one more time.
