Mocha Coconut Custard

Ingredients

  • 2 cups + ¼ cup coconut milk
  • ¾ cup coffee
  • 2 Tbsp. agave nectar
  • 2 tsp. vanilla extract
  • 1 Tbsp. cocoa powder
  • 3 Tbsp. cornstarch

Instructions

  1. Mix together 2 cups coconut milk, coffee, agave, vanilla extract and cocoa powder in a saucepan over medium heat.
  2. Mix cornstarch with ¼ cup of coconut milk in a small bowl, making sure there are no lumps.
  3. Pour cornstarch mixture into saucepan and mix well.
  4. Continue to cook for a few minutes or until mixture begins to thicken.
  5. Pour into individual bowls and chill for about 2 hours.
  6. Serve with your favorite toppings.
