Old World Carrot Cake
This recipe is from "Living Foods for Optimum Health."

1 C. black mission figs, soaked for 1 hour in ½ cup pure water
2/3 C. raisins, soaked for 1 hour in ½ cup water
1/3 C. pitted dates, soaked for 1 hour in ½ cup water
2/3 C. pine nuts
1 C. walnut pieces
4 C. finely grated carrot
1 C. shredded coconut
1 tsp. ground cinnamon
½ tsp. ground ginger
½ tsp. ground cloves


1. Drain the fruit and put through a Champion juicer or food processor.
2. Place in a large bowl and knead in the remaining ingredients until well mixed.
3. Mold into desired shape on a large serving plate and decorate with nuts or edible flowers.

Yield: 12 servings
