Ingredients:

C. apples, grated
2 Tbsp. lemon juice
¾ C. applesauce
½ C. frozen apple juice concentrate
4 tsp. egg replacer
½ C. water
½ C. mashed ripe banana
1 1/3 C. walnuts, finely chopped
2 C. whole-wheat pastry flour
1 tsp. baking soda
1 tsp. cinnamon
¼ tsp. each cloves and nutmeg

1. Mix the grated
apple and lemon juice together in a medium bowl.
2. Blend the next 5 ingredients in a food processor.
3. Stir blended ingredients into the apple/lemon mixture. Fold in the
walnuts.
4. Sift the whole-wheat pastry flour with baking powder and spices in
a separate bowl, then fold into the apple mixture.
5. Put into a large, lightly oiled cake pan. Bake at 325 degrees for
1 hour. Remove cake from its mold after it has cooled a bit and drizzle
Apple Cream on top (see Dessert section for recipe). Refrigerate.
Yield: 12-16 servings
