FRYPAN CRISPY BARS
This recipe is from “The Almost No Fat Cookbook” by Bryanna Clark Grogan.


Ingredients:

¾ C. pitted dates, chopped
½ C. sucanat
1 Tbsp. powdered egg replacer, beaten with ¼ C. water
1 C. natural crispy rice cereal
1 C. natural flaked corn cereal, crushed (2 scant cups whole flakes)
1 tsp. vanilla

 

1. In a heavy, small skillet, mix together the dates, sucanat, egg replacer and water. Stir over medium heat for 8 minutes, or until thickened.

2. Mix in the cereals and vanilla.

3. Either press into a greased 8” square pan, cool, and cut into bars, or roll the warm mixture into balls or logs. If you like, roll the balls or logs in finely ground no-oil granola.

Yield: 18 servings
