HUNZA DELIGHT

This recipe is adapted from the “Anti-Aging Cookbook and Recipes of Castle Medical Center’s John Westerdahl, MPH, RD, CNS.” This recipe is based on the dietary principles of the long-lived people of Hunza. Hunza is a remote region in the Himalayas where the inhabitants live to be 100 to 120 years old.


Ingredients:

Pick your fruits: Strawberries, pitted dark sweet cherries, peaches, blueberries, boysenberries, apricots, sliced bananas

½ C. each of the following: pecans, sunflower seeds, pumpkin seeds, raw peanuts, walnuts, and almonds

Soy yogurt
Maple syrup (optional)

 

1. In a large mixing bowl, mix several varieties of fruit. Any unsweetened fruit, fresh or frozen, may be used.

2. Chop or grind the nuts and seeds (these may be kept refrigerated in a jar).

3. For an individual serving, arrange on a plate in the following order: ¼ cup of the nut-seed mix, ½ cup of fruit mix, 1/8 cup plain or flavored soy yogurt, and 1 tsp. maple syrup, if desired.
