KRISPY RICE TREATS
With Chocolate or Carob and Peanut Butter
This recipe is from “Vegetables Rock!—A Complete Guide
for Teenage Vegetarians.”


Ingredients:

2 C. brown rice syrup
1 C. maple syrup
1 C. dairy-free chocolate chips or carob chips
1 C. natural peanut butter
1 Tbsp. vanilla
1-10oz. box Krispy Brown Rice cereal

 

1. In a medium-sized, nonreactive, heavy-bottomed saucepan, bring the brown rice and maple syrups to a slow boil over low heat.

2. Add the chocolate or carob chips and whisk until melted.

3. Whisk in the peanut butter

4. When the mixture is smooth, remove from the heat and stir in the vanilla.

5. Place the cereal in a large mixing bowl and stir in the chocolate-peanut butter mixture. When well combined, spread evenly in an oiled 9x13 baking dish. Bake at 350 degrees for 10 minutes.

6. Cool completely before cutting into squares with a sharp knife.

Yield: 20 servings
