STRAWBERRY POPSOYCLES


This recipe is from Vesanto Melina, MS, author of “Becoming Vegan.” These are easily made using a 6-ounce container of soy yogurt. Instead of fruit plus a sweetener, you may use sweetened frozen fruit. Kids love these frozen treats!

¾ C. fruit-flavored soy yogurt
¾ C. frozen or fresh strawberries
2 Tbsp. pure maple syrup

1. Place all ingredients into a blender and puree for 1-2 minutes until smooth.
2. Pour into popsicle molds and freeze until solid.
3. When frozen and ready to eat, popsoycles can be removed from their mold by running warm water over the outside of the mold.

Yield: about 4 servings
