VEGAN CHOCOLATE CAKE A LA MATT
This recipe plays with chemistry and has made Matt famous.
The baking soda and vinegar do the trick!

3 C. unbleached white flour
2 C. turbinado sugar
9 Tbsp. unsweetened cocoa powder
2 tsp. baking soda
Pinch salt

10 Tbsp. vegetable oil
2 Tbsp. vinegar
2 tsp. vanilla
2 C. water

1. Combine dry ingredients in a large bowl
2. Add wet ingredients and stir gently to mix. Don’t over-stir! The batter will be runny.
3. Pour batter into a lightly greased rectangular baking dish or into 2 round cake pans.
4. Bake at 350 degrees for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool before cutting.

Yield: 12 servings
