Wheat-free Blueberry Muffins
Wet Ingredients
1 ½ C. Soy Milk
2/3 C. Oil
1 Banana Mashed
1 Apple grated
2/3 C. Fresh or Frozen Blueberries
Dry Ingredients
4 C. Rice Flour
2/3 C. Tapioca Flour
2/3 C. Xylitol or Sugar or 1/2 tsp of stevia
2 tsp Baking Soda
2 pinches of salt
1 tsp. Cinnamon
1. Mix wet and dry ingredients separately then mix together.
2. Spray muffin pan with an all natural cooking spray or use paper muffin
liners.
3. Fill the muffin pan and bake at 350 degrees for 25 minutes.
Makes 12 muffins
