Pineapple Bliss Frosting

Ingredients

  • 6 Tbsp. crushed pineapple
  • ½ cup softened butter
  • 3 cups sifted confectioner’s sugar
  • 1-2 Tbsp. pineapple juice

Instructions

  1. Process pineapple until completely pureed.
  2. Cream butter with an electric mixer on low. Gradually beat in sugar. Increase mixer to medium speed and cream for a few minutes. You may need to scrape the sides a couple of times to ensure all sugar is incorporated.
  3. Stir in pineapple puree and beat at medium speed for a couple of minutes. Gradually pour in 1 Tbsp. pineapple juice. Mix until frosting looks spreadable. If still dense, add another Tbsp. pineapple juice.
  4. Serve on top of Golden Snitch Cupcakes or any of your favorite cakes or cupcakes. Enjoy!

Yields 1 ½ - 2 cups frosting
