Pumpkin Bread
This recipe is from “Holiday Recipes with a Vegetarian Twist.”

½ C. date sugar
½ C. maple syrup
¼ C. vegetable oil
2 C. whole-wheat pastry flour
1 C. whole-wheat flour
½ tsp. salt
½ tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
½ tsp. each of any two: nutmeg, cloves, allspice, anise
¾ C. pitted dates, chopped
1 ½ C. cooked pumpkin, mashed
½ C. soymilk

 

1. Mix date sugar, maple syrup and oil together.

2. Add flours, salt, baking soda and powder, and seasonings. Mix.

3. Add dates, pumpkin and soymilk. Mix.

4. Place batter into a lightly oiled loaf pan. Sprinkle a little oil on top.

5. Bake at 400 degrees for 20 minutes, then lower to 350 degrees and bake 30 more minutes or until done.

6. Cool on wire rack.

Yield: 8 servings
