Strawberry Shortcakes

Ingredients

  • 1 cup unbleached all-purpose flour
  • 1 cup whole wheat pastry flour
  • 2½ teaspoons baking powder
  • ¼ teaspoon salt
  • 4 Tablespoons chilled butter
  • ¾ cup milk
  • Fresh strawberries
  • Fresh whipping cream
  • Agave nectar (optional)

Instructions

  1. Preheat oven to 400°.
  2. Sift dry ingredients together.
  3. Rub in butter until mixture resembles course meal.
  4. Gradually add milk and mix to form a soft dough.
  5. Gently knead on a countertop for about 30 seconds.
  6. Roll out dough to ½" thickness.
  7. Cut into about 8 biscuits and place on a ungreased baking sheet.
  8. Bake for 12-15 minutes or until golden brown on the bottom.
  9. Cut in half and top with fresh strawberries and whipped cream. Drizzle agave nectar on strawberries if desired. Enjoy!
