Vegan Pumpkin Pie Filling

Ingredients

  • 2 C. pumpkin
  • ½ C. maple syrup
  • 1 C. soymilk
  • 1/3 C. cornstarch
  • ¾ C. fructose
  • 1 tsp. vanilla
  • ½ tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • ¼ tsp. sea salt

Instructions

  1. Whisk all the ingredients together.
  2. Fill a pie crust and bake at 350 degrees for 50 minutes.
