Green Goddess Guacamole

This recipe is from “A Celebration of Wellness.” This is a great fat-free substitute for the avocado-based condiment. None of the flavor is sacrificed, only the fat. Serve with chips or Mexican fare.

Ingredients

  • 1 cup shelled green peas (fresh is best but frozen is good too)
  • ¼ cup water
  • 1 jalapeno pepper, seeds and skin removed
  • 1 Tbsp. fresh lime juice
  • 1 Tbsp. fresh cilantro leaves, chopped and packed
  • 2-3 Tbsp. onion, chopped
  • Dash cumin powder
  • Dash of salt
  • 2 garlic cloves

Instructions

  1. In a small pan of water, steam the peas for 3 minutes until tender. Strain. (If using frozen peas, just thaw—no steaming needed.)
  2. Put the peas and ¼ cup steam water in food processor and puree.
  3. Add the remaining ingredients and continue to puree to a thick consistency. Stop occasionally to scrape down the sides.
  4. Transfer to a small bowl and garnish with cilantro, cayenne and a lime wedge.

Yields 1 Cup
