Macadamia Nut & Pineapple Salsa

This is a refreshing and delicious salsa that can be served cold or warm. This is adopted from the Veganomicon cookbook.

Recipe featured at our Vegetarian Taco Night in Kapolei 8/10/11.

Ingredients

  • 1 medium-sized pineapple, cut into thin slices
  • ¾ cup ground macadamia nuts
  • ½ cup diced red bell pepper
  • ¼ cup diced onion
  • 2 tsp. minced jalapeño pepper
  • 2 tsp. minced garlic
  • 2 Tbsp. chopped cilantro
  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. cider vinegar
  • ¼ tsp. ground cumin
  • pinch salt

Instructions

  1. Grill sliced pineapple in a skillet over medium-high heat until browned on both sides, about 15 minutes. Set aside to cool.
  2. Mix all other ingredients into a large bowl.
  3. Remove the core for the cooled pineapple and chop finely. Add pineapple to other ingredients.
  4. Adjust salt and spice to taste. Let stand for at least an hour before serving. Enjoy!

Yields 3 cups salsa
