GARBANZO SALAD SANDWICH SPREAD
This recipe is adapted from “Fat-free and Easy” by Jennifer
Raymond.
1 can cooked garbanzo beans, drained
1 lg. celery stalk, finely sliced
1 green onion, finely chopped, including green top
1 Tbsp. fat-free Nayonaise
2 tsp. stoneground mustard
2 Tbsp. sweet pickle relish
½ tsp. sea salt
8 slices whole-wheat bread or 4 pieces pita bread
4 lettuce leaves
4 tomato slices
1. Mash the garbanzo beans with a fork or potato masher, or quick process
in a food processor, leaving some chunks.
2. Add the celery, green onion, Nayonaise, mustard and relish. Add salt
to taste.
3. Spread on whole-wheat bread or serve in pita bread with lettuce and
sliced tomato.
Yield: 4 sandwiches
