GREEN GODDESS “GUACAMOLE”
This recipe is from “A Celebration of Wellness.” This is a great fat-free substitute for the avocado-based condiment. None of the flavor is sacrificed, only the fat. Serve with chips or Mexican fare.

1 C. shelled green peas (fresh is best but frozen is good too)
¼ C. water
1 jalapeno pepper, seeds and skin removed
1 Tbsp. fresh lime juice
1 Tbsp. fresh cilantro leaves, chopped and packed
2-3 Tbsp. onion, chopped
Dash cumin powder
Dash of salt
2 garlic cloves

1. In a small pan of water, steam the peas for 3 minutes until tender. Strain. (If using frozen peas, just thaw—no steaming needed.)
2. Put the peas and ¼ cup steam water in food processor and puree.
3. Add the remaining ingredients and continue to puree to a thick consistency. Stop occasionally to scrape down the sides.
4. Transfer to a small bowl and garnish with cilantro, cayenne and a lime wedge.

Yield: 1 cup
