HOLIDAY HUMMUS
This can be served as a dip with pita bread, and colorful veggie wedges such as tomato and cucumber. Serving crumbled feta cheese and olives on the side is nice too. Great party dip!

3 C. garbanzo beans, cooked
½ C. tahini (sesame butter)
3-4 cloves fresh garlic, minced
2 tsp. ground cumin (optional)
1/8 tsp. cayenne pepper (optional)
1/3 C. fresh lemon juice
1 Tbsp. olive oil
1 tsp. sea salt

Parsley garnish or kalamata olive
Dash of paprika

1. In a blender or food processor, thoroughly blend first set of ingredients into a smooth and creamy consistency. If too thick, add a little water. It should be the consistency of mayonnaise.
2. Spoon into a serving dish and sprinkle with a little paprika. Garnish with fresh parsley or kalamata olive.

Yield: 8 servings
