Zucchini Noodles with Raw Herb Cream Sauce

Enjoy this light and creamy version of traditional pasta. A spiralizer helps make perfect noodles, but you can also use a vegetable peeler or mandolin.

Ingredients

Raw Herb Cream Sauce

  • 1 cup macadamia nuts
  • ¼ cup fresh basil
  • ¼ cup fresh parsley
  • ¼ cup fresh dill
  • ½ garlic clove
  • Juice of 1 large lemon
  • Salt and pepper to taste
  • Water, as needed

Noodles

  • 4 zucchini
  • 2 carrots
  • 1 cup diced fresh tomatoes
  • 1 cup sliced black olives
  • Fresh herbs for garnish
Instructions
  1. Place all Cream Sauce ingredients into a blender and blend until smooth and creamy. Add water for a thinner consistency. Set aside.
  2. Make zucchini and carrots into noodles using a spiralizer or other method. Add to a large bowl. Pour Cream Sauce over noodles and toss to coat. Add in tomatoes and olive and garnish with fresh herbs. Serve immediately for best results.
