Creamy Cashew Basil Sauce

A sublime sauce thickened with tofu and cashews.

Ingredients

  • ½ C. cashew pieces
  • 10oz. soft silken tofu
  • ½ C. basil leaves, chopped
  • ½ Tbsp. garlic, minced
  • ¼ C. red onion, minced
  • 1 Tbsp. Braggs liquid aminos
  • 1 C. water
  • Cayenne to taste

Instructions

  1. Toast cashew pieces in toaster oven until light brown.
  2. Put everything except the water into a food processor and puree.
  3. Transfer to a small saucepan, add water and simmer for 10-15 minutes until thick.
  4. Serve over vegetables or grains.

Yields 2 ¾ cups
