CREAMY CASHEW BASIL SAUCE
A sublime sauce thickened with tofu and cashews.
½ C. cashew pieces
10oz. soft silken tofu
½ C. basil leaves, chopped
½ Tbsp. garlic, minced
¼ C. red onion, minced
1 Tbsp. Braggs liquid aminos
1 C. water
Cayenne to taste
1. Toast cashew pieces in toaster oven until light brown.
2. Put everything except the water into a food processor and puree.
3. Transfer to a small saucepan, add water and simmer for 10-15 minutes
until thick.
4. Serve over vegetables or grains.
Yield: 2 ¾ cups
