GOLDEN GRAVY
This recipe is from “The Nutritional Yeast Cookbook.”

¼ C. whole-wheat pastry flour
¼ C. nutritional yeast
1 ½ C. warm water or vegetable broth
2 Tbsp. soy sauce
1 Tbsp. olive oil
¼ tsp. onion granules
1/8 tsp. ground black pepper, or to taste

1. Place the flour in a dry 2-quart saucepan and toast it over medium heat, stirring constantly until it is lightly browned and fragrant.
2. Remove saucepan from the heat and stir in the yeast flakes.
3. Gradually whisk in the water or vegetable broth, soy sauce and oil until the gravy is very smooth. Then whisk in the seasonings.
4. Cook the gravy over medium heat, stirring almost constantly with the wire whisk until it is thickened, smooth and bubbly. Serve at once.

Yield: 1 ½ cups
