TAHINI SAUCE
This recipe is from “Great Vegetarian Dishes.”
1 C. tahini (sesame butter)
½ tsp. ground cumin
½ C. fresh lemon juice
½ tsp. yellow asafetida powder
1 tsp. salt
1 Tbsp. fresh parsley, finely chopped
1. Combine all the ingredients (reserving half the parsley) in a food
processor or blender. The sauce should resemble mayonnaise in consistency.
Add a little water if required.
2. Pour the sauce into a serving bowl and garnish with the reserved
parsley. Serve at room temperature.
