Holiday Casserole
This recipe is from "Holiday Recipes with a Vegetarian Twist," courtesy of the North American Vegetarian Society

4-10oz. pkg. frozen spinach
1 lg. onion, minced
½ C. walnut pieces
1 C. soft bread crumbs
1 lg. clove garlic, finely minced
2 tsp. vegetable oil
2 Tbsp. cornstarch or arrowroot powder
1 tsp. salt
1/8 tsp. pepper
1 C. tomato sauce


1. Cook the spinach in a small amount of water, only until defrosted. Drain.

2. Grind walnuts in a blender.

3. Briefly sauté breadcrumbs, garlic and oil.

4. Mix together well the spinach, walnuts, three-fourths of the breadcrumb, onion, cornstarch (or arrowroot), salt and pepper.

5. Place spinach mixture in a lightly oiled casserole dish and pat into a flattened mound.

6. Pull edges of spinach away from sides of casserole dish. Ring with tomato sauce.

7. Sprinkle remaining bread crumbs on top and bake uncovered at 350 degrees for 45 minutes.

Yield: 6 servings
