Vegan Pumpkin Pie Filling

2 C. pumpkin
½ C. maple syrup
1 C. soymilk
1/3 C. cornstarch
¾ C. fructose
1 tsp. vanilla
½ tsp. cinnamon
1 tsp. pumpkin pie spice
¼ tsp. sea salt


1. Whisk all the ingredients together.

2. Fill a pie crust and bake at 350 degrees for 50 minutes.

Yield: 8 servings
