Festive Holiday Stuffing

This is a recipe from “Kathy Cooks... Naturally.”

Ingredients

  • ¼ C. pumpkin seeds
  • ¼ C. diced celery
  • ½ tsp. asafetida
  • ½ tsp. fresh thyme, diced
  • ½ tsp. basil
  • 1 tsp. Spike
  • 1 C. cooked rice
  • ½ C. butter or margarine
  • ½ C. dried apricots, chopped
  • ½ C. dried peaches, chopped
  • ½ C. chopped dates
  • ¼ C. flaky nutritional yeast
  • 4 C. crumbled breadcrumbs
  • ¼ tsp. Dr. Bronner’s seasoning
  • 1 ½ tsp. chopped fresh parsley

Instructions

  1. Soak pumpkin seeds in water overnight or in hot water for 1 hour (keep soaking water for use in smoothies, gravies, etc.).
  2. Sauté next 5 ingredients together for two minutes.
  3. Add next 9 ingredients to sautéed ingredients and mix together thoroughly.
  4. Put ingredients in a covered casserole dish and bake at 350 degrees for 40 minutes. Serve with Mock Turkey Gravy (see recipe in Gravy & Sauce section) or other gravy.
