Vegetable Au Gratin

Ingredients

  • 10 cups mixed vegetables like broccoli, cauliflower, carrot, zucchini, and sweet potato, cut into bite sized pieces
  • ¼ cup olive oil
  • 1 cup diced onion
  • 4 cloves garlic, minced
  • 2/3 cup unbleached all-purpose flour
  • ½ teaspoon nutmeg
  • 1½ teaspoons dried basil
  • 1½ teaspoons dried thyme
  • 1½ teaspoons dried oregano
  • 5 cups warm milk
  • ¾ cups grated cheese + 1 cup for garnish

Instructions

  1. Preheat oven to 350°. Grease a 9 x 13 baking dish.
  2. Steam vegetables and set aside.
  3. Heat oil in a large pot.
  4. Add onion and garlic and sauté for 4-5 minutes.
  5. Remove from heat; add flour, nutmeg, and herbs. Mix to form a paste.
  6. Slowly whisk in warm milk.
  7. Return to heat. Stir constantly until thick.
  8. Add ¾ cup grated cheese, salt and pepper. Remove from heat.
  9. Add steamed veggies and gently toss to coat.
  10. Pour mixture into prepared baking dish. Sprinkle with remaining cheese and bake for 20 – 25 minutes or until cheese is golden brown. Enjoy!
