Cherry Tomato Shish Kabobs

Ingredients

  • 1 can pineapple chunks, drained
  • White button mushrooms, peeled
  • Shallots, cut into chunks
  • 1 green bell pepper, cut in pieces
  • Cherry tomatoes

Sauce:

  • 1/3 cup honey
  • ¼ cup Dijon mustard
  • ¼ cup olive oil
  • 1 Tbsp. soy sauce
  • 2 cloves garlic, minced
  • 1 tsp. powdered ginger

Instructions

  1. Combine sauce ingredients together in a bowl and whisk until smooth.
  2. Add pineapple and veggies, leaving the cherry tomatoes aside and toss until evenly coated.
  3. Pour mixture into a big Ziploc bag and marinate overnight, turning the bag occasionally.
  4. Arrange on kabob sticks and bake at 350 degrees for 7 – 10 minutes, brushing occasionally with remaining sauce.
