Chow Mein Stir-fry

Using leftover sautéed vegetables in this dish make it a truly budget-friendly meal.
Ingredients
  • 2 Tablespoons sesame oil
  • 2 cloves garlic, minced
  • 2 Tablespoons grated ginger
  • ¾ cup chopped onion
  • 1 pound chicken-style seitan
  • ⅔ cup sliced celery
  • ¾ cup sliced shiitake mushroom
  • 1 cup matchstick-sliced red bell pepper
  • 1 cup matchstick-sliced carrot
  • 1½ cups broccoli florets
  • 1 (12-ounce) package chow mein noodles
  • 1 Tablespoon sesame oil
  • 3 Tablespoons soy sauce
  • 2 Tablespoons rice vinegar
  • 1½ Tablespoons honey
  • 1 Tablespoon corn starch
  • ¼ cup water
  • 1 cup mung bean sprouts
Instructions
  1. Heat oil over medium heat.
  2. Add garlic and ginger and cook for 30 seconds.
  3. Add onion and sauté for 1 minute.
  4. Add seitan, celery, mushrooms, red bell pepper, carrot and broccoli.
  5. Meanwhile, bring a pot of water to a boil and add chow mein noodles to soften. Drain immediately and add to stir-fry.
  6. Combine sesame oil, soy sauce, rice vinegar and honey together to make a sauce. Dilute corn starch in water and add to sauce.
  7. Pour over stir-fry and cook for 5 minutes.
  8. Remove from heat and toss with mung bean sprouts. Enjoy!
