Picnic Potato Salad

Ingredients

  • 6 large red potatoes
  • ¾ cup celery, diced
  • ¾ cup olives, sliced
  • ¼ cup red onion, diced
  • ¼ cup sweet pickle relish
Dressing:
  • ½ cup vegan mayonnaise
  • ½ teaspoon Dijon mustard
  • 4 teaspoons of your favorite Balsamic vinaigrette)
  • Salt and pepper to taste

Instructions

  1. Boil potatoes until soft all the way through. Do not overcook! Drain and let cool before cutting into bite-size chunks.
  2. In a large bowl combine potatoes, celery, olives, red onion and pickle relish.
  3. In a small bowl combine dressing ingredients. Mix well and add to potatoes. Add salt and pepper.
  4. Serve chilled and enjoy!
