Scrambled Tofu w/ “Bacon”

Ingredients

  • ½ green bell pepper, diced
  • ½ cup onion, diced
  • 4 slices Yves Meatless Canadian Bacon, cut into strips
  • 1 block extra firm tofu
  • Dash of Bragg Liquid Aminos
  • 1 tsp. turmeric
  • ¾ tsp. cumin
  • ½ tsp. coriander
  • ½ tsp. salt
  • 1 can (14.5oz) diced tomatoes, drained
  • ¾ cup olives, sliced
  • 1/3 block cream cheese, cubed

Instructions

  1. Heat oil in fry pan.
  2. Add bell pepper and onion and sauté for a few minutes.
  3. Add “bacon” strips and cook until onions become transparent.
  4. Crumble in tofu and add a dash of Bragg Liquid Aminos.
  5. Cook until tofu begins to brown.
  6. Add spices and salt and mix well.
  7. Add tomatoes, olives, and cream cheese and combine.
  8. Turn off heat and serve.
