Tofu Turkey

Ingredients

Tofu Turkey

  • 6 pounds firm tofu
  • ½ cup nutritional yeast

Basting Sauce

  • ½ cup sesame oil
  • ¼ cup soy sauce
  • Stuffing of your choice
  • Gravy, such as Mock Turkey Gravy

    Instructions

    1. One hour before cooking, place tofu in a colander to drain. Weigh it down with a heavy object such as a can or jar on top of a bowl or plate.
    2. Preheat oven to 400°.
    3. Mash tofu very well and add nutritional yeast. Set aside ⅓ of the tofu mixture.
    4. Line a colander with cheesecloth or a clean towel, and press tofu into bottom and sides of colander. Make a hollow center, and fill with stuffing. Place the reserved tofu on top of stuffing to seal it in.
    5. Flip the tofu turkey onto an oiled cooking sheet. Remove the cheesecloth or towel. Baste with ¾ of the sesame oil and soy sauce mixture.
    6. Cover with foil and bake for 1 hour, basting with remaining sauce every 20 minutes. Remove the foil and bake uncovered for the last 20 minutes.
    7. Transfer to a serving platter and serve with gravy. Enjoy!
