Vegetarian Meat Loaf

Ingredients

    Sauce
  • ½ cup BBQ sauce of choice
  • 3 Tbsp. ketchup
  • 2 Tbsp. olive oil
  • Dash of hot sauce
  • Safflower oil to cover pan
  • 1 large onion, diced
  • 1 jalapeño, diced
  • 1 celery stem, diced
  • 1 package “Gimme Lean” Ground Beef Flavor Veggie Meat
  • Water
  • 2 tsp. ground flax
  • 1 cup cooked oatmeal
  • 1 cup breadcrumbs
  • ¼ cup nutritional yeast
  • 1 tsp. thyme
  • 1 tsp. basil
  • 1 tsp. garlic powder
  • Salt and pepper to taste
  • 2 Tbsp. Vegetarian Worcestershire Sauce

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine sauce ingredients in a small bowl and mix well. Set aside.
  3. Sauté onion, jalapeño, celery and veggie meat on medium heat in safflower oil, until lightly browned. Transfer to a large mixing bowl.
  4. Pour just enough water to cover the surface of flax. Stir well.
  5. Combine sautéed mixture, flax mixture and remaining ingredients and mix well.
  6. Pour mixture in an oiled loaf pan. Pat meatloaf down until even.
  7. Cover meatloaf with sauce. Spread evenly
  8. Bake uncovered for 45 minutes. Remove from heat and let cool. Serve on a large platter or individual pieces and enjoy!
