Veggie Casserole

Recipe featured at our Kahului Cooking Class : Movie Night (8/2/11)

Ingredients

  • 1 medium chopped cauliflower
  • ½ cup sliced red bell pepper
  • ½ cup sliced yellow bell pepper
  • 2 cups string beans
  • Sauce:
  • 1 tablespoon walnuts
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon sage
  • 4 tablespoon nutritional yeast
  • 1 teaspoon salt
  • 2 teaspoon fresh dill
  • 2 teaspoon olive oil
  • Juice of 1 lemon
  • 5 tablespoons bread crumbs

Instructions

  1. Steam veggies for 5 – 8 minutes and place into a small glass baking dish.
  2. Add all sauce ingredients to food processor and pulse until mixed.
  3. Set oven to broil.
  4. Pour sauce onto veggies and add bread crumbs.
  5. Broil for 3 – 5 minutes or until golden brown.
  6. Remove from oven, let cool and enjoy.
