CREAMY PARMESAN RISOTTO
This is delicious. Risotto is a type of pasta that looks like rice.

2 Tbsp. butter or olive oil
½ Purple onion, diced
1 Carrot, peeled & thinly sliced
3 Chard leaves, washed & chopped

2 Tbsp. pine nuts

1 box Lundberg Risotto, Creamy Parmesan

1. Sauté the first four ingredients for about 3 minutes. Turn off heat.
2. Toast pine nuts in oven under broiler for about 2-3 minutes.
3. Cook Risotto as directed on the box.
4. Place Risotto on plates. Create a well and place some of the sautéed veggies in it. Top with pine nuts. You may arrange cucumber slices around the plate for garnish.
