FESTIVE HOLIDAY STUFFING
This is a recipe from “Kathy Cooks…Naturally.”
¼ C. pumpkin seeds
¼ C. diced celery
½ tsp. asafetida
½ tsp. fresh thyme, diced
½ tsp. basil
1 tsp. Spike
1 C. cooked rice
½ C. butter or margarine
½ C. dried apricots, chopped
½ C. dried peaches, chopped
½ C. chopped dates
¼ C. flaky nutritional yeast
4 C. crumbled breadcrumbs
¼ tsp. Dr. Bronner’s seasoning
1 ½ tsp. chopped fresh parsley
1. Soak pumpkin seeds in water overnight or in hot water for 1 hour
(keep soaking water for use in smoothies, gravies, etc.).
2. Sauté next 5 ingredients together for two minutes.
3. Add next 9 ingredients to sautéed ingredients and mix together
thoroughly.
4. Put ingredients in a covered casserole dish and bake at 350 degrees
for 40 minutes. Serve with Mock Turkey Gravy (see recipe in Gravy &
Sauce section) or other gravy.
