FESTIVE MOCK STUFFED TURKEY
This is a recipe from “Kathy Cooks…Naturally.” Serve
this holiday treat with Kathy’s Festive Holiday Stuffing and Mock
Turkey Gravy.
1 block solid tofu
½ C. soy sauce
2 Tbsp. water
½ recipe Festive Holiday Stuffing (see recipe in Side Dish section)
6 lg. Pieces of yuba
Mock Turkey Gravy (see recipe in Gravy & Sauce section)
1. Cut tofu in half across the width of the block, then cut each half
into thirds by cutting across the width.
2. Combine next two ingredients and soak the 6 tofu pieces in the liquid
for a few minutes.
3. Remove tofu from the liquid. Split each block in half so the pieces
of tofu are like a sandwich. Divide stuffing into sixths and put one
part on a piece of tofu and top with the other half of the split block.
Repeat until all 6 are stuffed.
4. Lay yuba in a large pan and cover with water. Soak about 5 minutes
or until flexible.
5. Remove one sheet and dip in soy sauce and water. Lay sheet out and
put one stuffed block of tofu in the middle of yuba. Take one end of
yuba and fold it over, tucking it under the tofu. Fold both side pieces
into the middle and roll it up like wrapping a package. Repeat until
all are done and you have 6 bundles.
6. Place in a steamer and steam for 10 minutes. Remove and dip in soy
sauce liquid again.
7. Put in a pan and bake at 350 degrees for 10 minutes or until yuba
starts to get hard and browned. Serve topped with Mock Turkey Gravy.
