GLUTEN BBQ
This “wheat-meat” is a tasty meat alternative.
Seitan cubes:
8 C. Bread flour
6 C. Water
4 Qts. Water
½ C. Soy sauce
Marinade sauce:
1 C. Ketchup
1 C. Soy sauce
1 C. Pineapple juice
½ C. BBQ sauce
1 Tbsp. Black pepper
1 C. Brown or turbinado sugar
1. To make the seitan, mix the flour and 6 cups water. Knead into a
soft dough. Cover with water and soak at least two hours—overnight
is best.
2. Wash the dough under running water until almost clear. Boil the 4
quarts of water and soy sauce, then add the gluten. Simmer for 2 hours.
3. Drain seitan well. Cool, then slice into cubes. Either deep fry the
cubes or bake at 350 degrees for 25 minutes.
4. Mix marinade sauce and combine with seitan. Marinate for at least
2 hours. Arrange on skewers and barbeque on grill or broil in oven.
