INDONESIAN STYLE TOFU SATAY

1 block firm tofu, drained and cubed
2-3 Tbsp. soy sauce
2 Tbsp. peanut or cashew butter
2 Tbsp. honey
1 Tbsp. maple syrup
1 Tbsp. lemon juice
1 Tbsp. chopped ginger root
3 cloves garlic, minced
½ tsp. chili powder
½ tsp. sesame oil
2 Tbsp. thinly sliced green onions

1. Arrange the cubed tofu on skewers. Brush with 2 Tbsp. soy sauce and refrigerate for at least an hour.
2. Blend the rest of the ingredients with 1 Tbsp. soy sauce, except the green onions. Stir the onions into the blended sauce.
3. Bake tofu at 400 degrees for 20 minutes, turning after 10 minutes. Brush with the sauce and serve.
