RICE PAPER WRAPS
1 pkg. rice papers
1 pkg. bean sprouts
A few sprigs of fresh mint, finely chopped
2-3 green onions, finely chopped
2 carrots, shredded
1 block firm tofu, marinated with tamari, ginger teriyaki or your favorite
marinade
½ C. smooth peanut butter
¼ C. honey
¼ C. tamari
¼ C. fresh lemon juice
1. Place 2 rice papers at a time into a pie dish filled with very warm
water.
2. After the papers soften, take them out and fill with ingredients.
3. Wrap ends over, then sides, making into a nice roll.
4. For peanut sauce, combine second set of ingredients together. Use
this sauce for dipping.
