TERIYAKI TEMPEH
Tempeh is a delicious food made from soybeans. Other grains are often
included, and a culture similar to acidophilus is added. A nutritious
mold binds the beans and grains and the result is a very high-protein
food. Down to Earth sells many different varieties of tempeh.
Basic tempeh:
1 pkg. tempeh of your choice
3 Tbsp. safflower oil
1/3 C. water
2 Tbsp. soy sauce or Braggs; add more if you like
3 Tbsp. nutritional yeast
1 tsp. Spike seasoning salt
1. Heat oil in a non-stick skillet over medium heat, and add cubed
tempeh. Let brown for about 3 minutes.
2. Add the water and soy sauce and cover. Turn down the heat to low
and let cook for about 10 minutes.
3. Turn off heat and sprinkle tempeh with nutritional yeast and some
Spike. This can be served as is, or with BBQ sauce, peanut sauce, or
teriyaki sauce over brown rice.
TERIYAKI SAUCE
1 piece fresh ginger, thumb-size
3 Tbsp. safflower oil
1 C. soy sauce or tamari
1 C. honey
½ C. water
2 Tbsp. tapioca flour mixed into 3 Tbsp. water to make a paste
1. Grate the ginger. Heat oil in a non-stick skillet and add ginger.
2. Sauté for about 2 minutes, then pour in the soy sauce, honey
and water. Bring sauce to a boil and then turn heat down to low.
3. Add the tapioca paste and cook until thick.
4. Pour over sautéed tempeh and brown rice.
